This Festive Bikini – The Method

WThis is a home-style version of a drink from the seasonal cocktail list. Designed as a party-sized premix that's loaded with the essence of a Christmas time, rendering it perfect for your festive gathering. Save the extra citrus syrup for morning drinks, sweets, or to make another batch of the drink.

Bikini Recipe

Serves 10 people

Ingredients for the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Put the listed ingredients into a pot, bring to a gentle boil, agitating until the sugar dissolves. Next, turn off the stove and leave to cool down completely. Transfer into a sterilised bottle, seal and store in the fridge, it can be stored for about four weeks.

To make Batch Mix: Mix all the liquids into one large bottle, allow it to infuse for an hour, then filter it preferably using cheesecloth, to ensure it's perfectly clear.

When ready to serve: Add 85ml from the batch mix into a mixing glass containing ice, and agitate lightly for one minute to cool it down. Pour into a chilled martini glass or similar, decorate with a few cranberries and finish with a quick spritz with the mandarin essence over the drink.
